To celebrate our third birthday, we’ve decided to brew a very special version of our beloved Mosaic pale ale, Carmen. Not only is this new beer a celebration of our third year, it’s also been two-years since we brewed our first batch of Carmen. So, we would like to unveil Carmen Carmen – a double IPA version! Over the last two years we’ve tweaked the recipe, sanded down the rough edges, added some metaphorical varnish and settled on a wonderfully fragrant, juicy, hazy and delicious pale that you can now find in some of the city’s finest drinking and eating establishments, as well as further afield.
Carmen Carmen is an amped up version of the settled recipe. We use exactly the same malts, wheat and oats from Paul’s Malt but in more quantity. We use the same WCH yeast and Mosaic Cryo hops from Yakima Chief. What you have in your glass is a delightfully hazy IPA resulting from loads of development work, tonnes of passion and something we’d like to share with you in celebration of these two milestones for Carnival.

Storage Instructions
We store Carmen Carmen in the cellar to keep it cold while in transit, so it gets to you in optimal condition. For best results we recommend you store in the fridge and drink within six months of purchase.
