We used one of our solid, in-house sour grain bills and fermented with Sour Hour yeast to form the base sour beer.
We then added lemon zest, cassia bark, ground cinnamon, mixed red chillies and scotch bonnets, and finally allowed the beer to rest on Fireball Whiskey-soaked oak chips.
The result is a tart, yet warming and inadvertently-christmassy-spiced sour beer that'll warm your cockles in the cold months, without burning your head off. RIP Jerry Lee Lewis.

We store Beer Ink in the cellar to keep it cold while in transit, so it gets to you in optimal condition. For best results we recommend you store in the fridge and drink within six months of purchase.
