Since we opened Carnival, we always had in mind the idea of creating our own spirits range, applying our flare with flavours to a wider range of drinks.
From the early days, we have stocked Liverpool Lost Dock Rum in our tasting room bar and forged a great relationship with the guys behind this brilliant local brand who import the finest rum from the Caribbean then blend it with their own spice mixes and flavours.
In the final months of 2020, we emptied some Jamaican rhum casks of our spiced imperial stout, the Rhum Parkin collaboration with Sprawl Kitchen, that had been aged for 9 months. We agreed to hand these over to Lost Dock for them to age an unspiced new rum blend to start what we hope will be an exciting Beer | Spirit rotational project.
The first bottles of this collaboration are now available to buy from Lost Dock - 2021 Signature Blend Stout cask finished rum
The resulting drink is a delicious pure rum: no added sugar; no spicing; no flavourings or caramel. 845 bottles of 43% rum were packaged and it tastes absolutely fantastic - notes of Vanilla, Citrus, Green Plums and Marzipan make way for a deep Woody and Liquorice finish.
We are now working on a new recipe for a beer that will go back into the now empty casks for further ageing. Keep an eye out for news about this one - it'll be brewed and stored away in December ready for a spring-time can release.
